This wine was made from fruit from Demetria Vineyard, located just north of Los Olivos. The fruit was mostly destemmed, and saw daily pumpovers during fermentation before being pressed off and aged in neutral oak. Like all my wine, the only addition was sulfur, and that was done minimally. Enjoy!
